Pursuant to the latest requirements of the European Union the company "Lalov & Vachev" has introduced and applies since 2002 the Best production and hygiene practices.
They are combination of simple procedures related to the hygiene in the production and are in the basis of a more complicated system for the production of harmless food products - НАССР (Hazard Analysis And Critical Control Point). This system for analysis and control of the critical points was introduced by NASA in the late 60s of the 20th century, in order to produce quality and safe food for the aeronauts.
The system is based exactly on the creation of a product which is harmless for end-consumer's health. The guarantee for its harmlessness is achieved through control along the whole nutrition chain - from farm to client's table. Today НАССР is compulsory in many countries in the world and was adopted by "Lalov & Vachev" Ltd. in 2005. As an element of the nutrition chain the company is an intermediary between the farm and the meat-producing company on one hand, and the end consumer on the other. Accepting quality raw material, the company commits to produce not only tasty, but also safe product. The in-coming raw materials are compulsorily subject to entry control, which includes monitoring the following parameters – temperature, pH, and apart from this visual control. The supplier, on his part, also guarantees the quality of his delivery with the respective documents.
All phases and points of this production process are subject to strict control. Special attention is paid in the so called critical point, since the hazards (biological, chemical and physical) are most significant there. If the monitored parameter is out of the referent limits, actions are taken to straighten it, as well as actions to prevent a harmful product reaching the end consumer.
The functioning of the system is regularly controlled by internal and external auditors.
